Wonderful with potato salad! It is healthier and has less fat than conventional mayonnaise.

Tofu Mayonnaise

1 cup (250 ml) tofu, drained
2 Tbs. (30 ml) olive oil
4 Tbs. (60 ml) vinegar
1 clove garlic
  • Blend tofu in a blender or food processor until smooth.
  • Slowly add oil in a stream through the top, while the blades are still turning.
  • Blend until thick.
  • Chill.

Almond Mayonnaise
Great sandwich spread or dressing!
Make it the day before you need it.
All ingredients are room temperature before beginning.

1 cup (240 ml) almonds, soaked 8 hours
juice of one lemon
1 Tbs. (15 ml) apple cider vinegar
1 clove garlic
1 cup (240 ml) water
1/2 cup (120 ml) olive oil
  1. Blend all ingredients except the oil in a high speed blender or food processor.
  2. Slowly add oil in a thin stream, continuing to blend until tick.
  3. Add just the tartness and texture to suit your taste.
  4. Chill before using.
