This is usually a holiday dish, but can be a main dish or an appetizer.

Serves 4
4 hard boiled organic eggs, cooled and quartered
2 15-ounce (420 g) can of field beans*, save the liquid
2 chopped cloves of garlic
2 Tbs. (30 ml) olive oil
3 Tbs. (45 ml) organic lemon juice and some lemon wedges
2 Tbs. (30 ml) chopped scallions
4 Tbs. (60 ml) chopped parsley
- *also called: vicia faba, broad bean, fava bean, bell bean, or tic bean
- native to North Africa, southwest and south Asia
- found in Middle Eastern grocery stores or
- substitute with canned organic: fava, kidney, or pinto beans
- 100 g = 26,12 g protein
1. In a large saucepan, combine beans, their liquid, garlic, olive oil, and lemon juice. Mix well.
2. Simmer over medium heat, stirring a few times, about 10-15 minutes.
3. Pour beans into individual bowls.
4. Garnish with hard boiled eggs, parsley, scallions, and lemon wedges.
5. Serve with pita bread.
