Marinating the chicken will add flavor and moisture.
Serves 4
marinate 30-60 minutes
1. In a zip lock bag add:
4 organic or free range chicken breast or thighs
1/2 cup (120 ml) mint
3 Tbs. (45 ml) organic lemon juice
2 Tbs. (30 ml) olive oil
1-2 mince garlic
1-2 tsp. (5-10 ml) paprika to taste
optional:
- add other herbs
- couple of spoonfuls of orange marmalade
- use lime instead of lemon juice
2. Seal the bag and refrigerate for about 45 minutes or longer.
3. Grill and base the chicken with the juice.

3. Bake the chicken with the marinated juices.
4. Serve with any of the juice over the top of the chicken
optional: some organic plain, Greek, or almond (dairy free) yogurt on top
