Harissa is a hot chili pepper paste. We mainly use it with couscous, but the tube goes bad before ever finishing it. So let's add it to some vegetables!
(Arabic) الهريسة مع الجزر 
Preheat the over to 450℉/230℃
2 finely grated garlic
1/4 cup (60 ml) or less olive oil
1/4 cup (60 ml) or less organic maple syrup
1 Tbs. (15 ml) harissa paste or more to taste
2 tsp. (10 ml) cumin seeds
some ground black pepper
small organic carrots (trimmed and cut in half)
1 organic lemon, thinly sliced, seeds removed

1. Whisk garlic, oil, maple syrup, harissa, black pepper, and cumin seeds in a bowl.
2. Toss carrots and lemon with the garlic mixture in a large roasting pan.
3. Roast until carrots are tender and lemons are caramelized, about 35-40 minutes.

*Substitute with different vegetables and adjust the roasting time.
