Frittata Con Qualsiasi Cosa Abbiate (Italian)
Serves 4
Preheat oven to 375℉ (190℃)

6 organic eggs, beaten
2 Tbs. (30 ml) plain Greek or almond-dairy free yogurt
2 tsp. (10 ml) each: marjoram, thyme, parsley, Italian spice
pinch or two of black pepper
pinch of nutmeg
sea salt
olive oil
some organic: cherry tomatoes cut in half or diced regular tomatoes
3 Tbs. (45 ml) gluten free almond or coconut flour
2 Tbs. (30 ml) grated hard cheese (or daily free cheese)
organic vegetables on hand:

organic vegetables on hand:
- chopped broccoli
- spinach
- thinly sliced leeks, whites and green parts-well washed
- chopped Swiss chard
- chopped kale
- 2-3 thinly sliced fried potatoes
- sliced zucchini
- sauté onions and garlic
- a few chopped, sauté Jerusalem artichokes (aka sunroof, sunchoke, earth apple, or topinambour)
- chopped asparagus
- etc.
2. In a oven proof or iron skillet, sauté non-leafy vegetables about 6 minutes.
3. Add the leafy vegetables, cover and steam about 2 minutes.
4. Arrange tomatoes on top.
5. Pour egg mixture over the tomatoes.
6. Sprinkle cheese and flour on top.
7. Bake on the center rack of the oven for 10-15 minutes.
8. Turn the oven to boil, move the rack to the top, broil a few minutes until the cheese and flour are golden brown.
9. Serve hot or at room temperature.
