We do not use butter very often. Mike's mother would use a month of our butter in two weeks when she visited. Mike likes to sauté mushrooms in butter. Here are some other butter infused hints which can add zest to many foods.

- spread along the bottom of parchment paper, roll up the mixture in the paper, chill in the refrigerator, unroll and slice pieces, place a few slices on top of food
- mix with the food
A. spice and honey: little cinnamon and honey = with breakfast rolls
B. fruit preserve: a spoonful or two = with toast, rolls, or croissant
C. cheese and scallions: use soft cheese and chopped scallions = on vegetables, meat, fish
D. herbs: 1 Tbs. (15 ml) single herb or mixed herbs of choice = over vegetables, potatoes, meat or fish; as a sandwich spread
E. lemon or lime: zest of one organic = vegetables, meat, fish; lemon butter with pasta
