The colorful, yellowish rice is a great side dish to any Latin American or Spanish dinner.
Serve 8
1 15-ounce (420 g) organic stewed tomatoes
1 ½ cups (360 ml) organic chicken stock
1 ¼ cups (300 ml) rice
1 Tbs. (15 ml) (dairy-free) butter
2 tsp. (10 ml) chili powder
1 tsp. (5 ml) each: oregano and cumin
green onions
1. Combine all the ingredients in a medium saucepan.
2. Bring to a boil, reduce heat to low.
3. Cover and simmer 25 minutes or until rice is done.
4. Garnish with chopped green onions.
