Trying to add some fruit to our dinners, apples are one of the healthiest foods with high fiber and vitamin C, no sodium, fat, nor cholesterol, plus an antioxidant.
Serves 4
Preheat oven to 425℉ (165℃)
6 cloves of smashed garlic
2 organic apples, cut into wedges (leave the skin on)
2 red or yellow organic onions, cut into wedges
wedge slices of artichoke hearts
1 organic lemon, thinly sliced or some lemon juice
1 Tbs (15 ml) dry rosemary
3 Tbs. (45 ml) olive oil
4 or more organic or free range chicken thighs
1. In a baking sheet, toss the garlic, apples, onions, artichoke hearts, lemon and herbs with 2 Tbs. (30 ml) of oil.
2. Roast for about 10 minutes.
3. Rub the chicken with remaining oil.
4. Place the chicken pieces among the vegetables and roast about 15 minutes.
5. Remove the vegetables when they are golden brown and tender.

6. Turn the chicken over and cook 15-20 minutes until done and not pink in the middle.
