Try this Italian sauce over boiled potatoes or boiled eggs as a side dish or appetizer.
Salsa alla Menta
1 packed cup (240 g) fresh parsley leaves
1/2 packed cup (120 g) fresh mint leaves
2 Tbs. (30 ml) white wine vinegar
1/4 cup (60 ml) olive oil
little organic lemon juice
1. In a food processor, combine parsley, mint, and vinegar. Pulse once or twice.
2. Drizzle in the oil and lemon juice.
3. Serve over hear-boiled organic eggs cut in half OR toss with cubed boiled organic potatoes.
