This great African flavors can be made at home. If serving guests, check to see if anyone has a peanut allergy.
Serves 8

hot cooked brown rice
1/4 tsp. (1 ml) black pepper
3 Tbs. (45 m) olive oil
1 medium onion thinly sliced
5 minced garlic cloves
2 Tbs. (30 ml) minced ginger root (2 tsp./10 ml dry)
2 cans (15 1/2 oz=465 ml) organic black-eyed peas, rinsed, and drained
1 can (28 oz=850 ml) crushed organic tomatoes
1 large sweet organic potato, cut into 1-inch (2,55 cm) cubes
1 cup (240 ml) organic chicken or vegetable broth
1/4 cup (60 ml) creamy organic peanut butter (almond butter "dairy-free")
1 1/2 tsp. (7,5 ml) minced fresh thyme or 1/2 (2,5 ml) dried thyme
1/4 tsp. (1 ml) cayenne pepper

1. Sautée onions in oil until tender.
2. Add garlic and ginger, cook 1 minute.
3. Stir in the peas, tomatoes, potatoes, broth, peanut butter, 1 1/4 tsp. (6 ml) thyme and cayenne.
4. Bring to a boil. Reduce heat, cover, and simmer 15-20 minutes.
5. Serve with rice and sprinkle rest of thyme.
