Brown rice has more vitamins, dietary minerals, fatty acids, and fiber than white rice = a healthier choice + this recipe uses no oil.
Arroz Integral Española
Serves 6-8


3 cups (720 ml) of water or vegetable stock
2 cups (480 ml) long grain brown rice
1 cup (240 ml) finely chopped onions
2-3 minced garlic cloves
4 cups (800 g) chopped organic spinach, stems removed, cleaned well
2 Tbs. (30ml) organic tomato paste

1. Put all the ingredients in a medium-sized pot. Stir.
2. On high heat, bring to a boil.
3. Turn to low, cover, and cook for 55 minutes, without lifting the lid.
4. If all the liquid has not been absorbed, cook 5-10 minutes longer.
5. Once all the liquid is absorbed, stir again.

Serve with any Latin dish, mixed salad, and red wine.
