If you have some avocados left over after making guacamole, 
make a salad the next day.

2 Tbs. (30 ml) each: chopped chervil* and organic lemon juice
1 Tbs. (15 ml) olive oil
black pepper to taste
2 ripe avocados

1. Mix lemon and oil together.
2. Add salt (optional) and pepper.
3. Slice the avocados into the lemon mixture.
4. Cover and chill for an hour.
5. Sprinkle chervil before serving.

*Try different herbs.
