Add everything to a slow cooker. Turn on. Leave. Return and dinner is ready! Easy meal. Mole /mō-lā/ Nahuatl language: mōlli "sauce") is a chocolate sauce used in Mexican cuisines from Puebla, Oaxaca, and Tlaxcxla. 
Serves 4
Takes 8 hours

4 skinless free-range or organic chicken thighs
1/4 tsp. (1,2 ml) black pepper or to taste
1/4 cup (60 ml) each: water, smoked organic almonds and organic raisins
2 Tbs. (30 ml) unsweetened cocoa
1 Tbs. (15 ml) each ground: cinnamon and cumin
2 Tbs. (30 ml) organic tomato paste
2 chipotle chiles, canned in adobo sauce
4 crushed garlic cloves
1 chopped onion
OPTIONAL: buy a jar of mole

1. Sprinkle chicken with pepper.
2. Place in a slow cooker.
3. Place 1/4 cup (60 ml) water and above ingredients in a food processor. Process until smooth.
4. Spread mixture over chicken.
5. Cover and cook on LOW for 8 hours or until chicken is tender.
6. Eat as is or shred with a folk and use in tacos.
