Looking for an oil-free ranch dressing? Try this vegan dressing with protein. Have your children help, which could get them interested in cooking and delicious learning experience.
Makes 2 cups (480 ml)

1/2 cup (120 g) each: organic cashews and water
1/4 cup (60 ml) organic lemon juice
8-ounce (225 g) crumbled organic tofu
1 Tbs. (15 ml) Dijon mustard
2 Tbs. (30 ml) chopped onion
2 cloves of garlic
1 tsp. (5 ml) dried dill or 1 Tbs. (15 ml) fresh dill
1/2 tsp. (2,5 ml) black pepper

1. Blend or purée: cashes, water, and lemon juice.
2. Add the remaining ingredients and process until creamy.
3. Store in a jar in the refrigerator up to 2 weeks.

NOTE: Do you want a thicker dressing? 
1. Replace the cashes and water with 1 cup (240 ml) vegan mayonnaise or plain organic yogurt.
2. Purée everything.
