Teresa, a friend of ours from Misawa Air Force base, made this fantastic soup one evening!
A. Sauté
1 medium chopped onion
3-4 cloves minced garlic
1 Tbs. (15 ml) olive oil
B. Add
1 small can of minced chiles
1 tsp. (5 ml) cumin
1/2 tsp. (2,5 ml) oregano
Cook until fragrant.
C. Add
2 cans of organic tomatoes
1 can or more organic chicken broth
organic red beans
(She added cut, cooked chicken)
D. Add
organic lime juice
salt and pepper
E. Serve
over (GF) tortilla chips, add (DF) cheese, organic avocado, olives, etc.
