Za'atar* (Hebrew צעתר, Arabic صعتر) is a general name for a mixture of Middle Eastern herbs: thyme, oregano, marjoram, salt, and some toasted sesame seeds, maybe even sumac is added. Here is a nut mixture for the holidays.

Makes 5 cups (1200 g)
Preheat the oven to 300F (150C)
2 cups (480 g) each organic: shelled pistachios and cashews
1 cup (240 g) organic raisins
1 Tbs. (15 ml) olive oil
2 tsp. (10 ml) za'atar seasoning*
1. Bake for 15 minutes.
2. Cool before serving.
*Make your own za'atar
1/4 cups =60 ml
Combine:
1 Tbs. (15 ml) fresh or 1 tsp. (5 m) dried each:
- oregano
- sumac
- cumin
- sesame seeds
1 tsp. (5 ml) seat and ground black pepper
Store in airtight container at room temperature.
