Las Patatas Dulces Rellenas con
Frijoles Negros y Espinacas (Spanish)
Serves 4
4 large organic sweet potatoes, scrubbed and patted dry
1 Tbs. (15 ml) olive oil
1-2 cloves of garlic, chopped
1 15-ounce (425 g) organic back beans, rinsed
1/2 tsp. (2,5 ml) each: cumin and cayenne pepper
1 bunch organic spinach (discard the thick stems and chop the leaves)
1 large organic lime, cut into 4 wedges or liquid lime
6 ounces (180 ml) plain organic yogurt or dairy free almond yogurt
sliced scallions for garnish
1. Pierce the potatoes several times with a folk.
2. Cook in the microwave on high, about 18 minutes.
3. Heat the oil and garlic in a skillet over medium heat.
4. Add the beans, cumin, cayenne, and 2 Tbs. (30 ml) water. Increase the heat to medium-high and cook about 2 minutes.
5. Add and toss the spinach and cook 1-2 minutes. Remove from the heat.
6. Split the potatoes and season with black pepper to taste.
7. Squeeze a lime wedge or drizzle lime over each potato, top with the bean mixture.
8. Serve with dollop of yogurt, sliced scallions and extra lime wedges.

*Grow a sweet potato house plant:
1. Use a very small sweet potato.
2. Stick three toothpicks around the bottom.
3. Place in a jar of water.
