Hot soup on a cold evening, way to go! My niece teaches in Amsterdam. So we dedicate this recipe to her.-Mike
Winter Erwtensoep (Dutch)
Needs to simmer for two hours.

In a Dutch oven (why not?), 
een 1. 2 Tbs. (30 ml) olive oil
twee 2. Diced the following organic vegetables and add to the soup pot: 
  • 1 large onion 
  • 2 organic celery stalks
  • 2 organic potatoes
  • 2 organic carrots
drie 3. Sauté until onions are translucent.
vier 4. Add one container of organic chicken or vegetable broth.
vijf 5. Bring to a mild boil.
zes 6. Add package of organic peas and optional a ham hock.
zeven 7. Add water to cover peas and ham hock. 
acht 8. Bring to a boil, stir, and lower the heat to simmer for 2 hours. Stir occasionally.
negen 9. Peas will dissolve to a thick paste. 
tien 10. Remove the ham, take off the meat from the bone, and cut into small pieces. Add back to the pot of soup.
elf 11. A black pepper to taste.
