Use the sauce with grilled kebabs or chicken, on top of cabbage or cucumbers. Cashews is a good substitute for peanuts.
Makes 1 cup (240 ml)

1/2 cup (120 ml) sliced red onion
2 sliced garlic cloves
1 Tbs. (15 ml) each: grated fresh ginger, organic brown sugar, and olive oil
1 tsp. (5 ml) chili powder or cumin
2 Tbs. (30 ml) soy sauce or gluten-free liquid amino
1/3 cup (65 g) organic unsalted peanuts or cashews
1 Tbs. (15 ml) organic brown sugar
1/4 cup (60 ml) water

1. Sauté the onion and garlic in the oil until brown, about 5 minutes, allow to cool.
2. Combine all the other ingredients in a blender and pulse into a sauce.
