Marinato Broccoli con Carote e Funghi (Italian)
Chill mixture for 4 hours

A. In a bowl, mix together:
3/4 cup (180 ml) olive oil
1/4 cup (60 ml) red wine vinegar
2 Tbs. (30 ml) each dried: oregano, basil, and parsley
1/2-1 tsp. (2,5 - 5 ml) red pepper

B. Add:
2 cups (400 g) cut organic broccoli
1 cup (240 ml) each cut organic: carrots and mushrooms

C. Mix together "A" and "B".

D. Chill 4 hours.

broccoli = high vitamin C
carrots = vitamin A                              
mushrooms = vitamin B

The broccoli stalks have a mild flavor. First peel the tough outer layer, thinly slice, and bake or sauté until tender. The leaves are cooked like collard greens.
