Cuba empanadas de frijol negro con arroz piña
(Spanish)
Serves 4
We had this months ago and just found the recipe. It is just as great the second time around!

A. Rice:
cooked brown rice, prepared for 6 people (=serves 4)
1/4 cup (60 ml) chopped cilantro
1/2 tsp (2,5 ml) salt
1/4 tsp (1,25 ml) black pepper
juice from 1/4 of a lime
1 cup (240 ml) diced fresh pineapple OR small can of crushed pineapple

1. Mix the cooked rice with the cilantro, salt, pepper, lime juice and pineapple. Set aside.

B. Patties:
2 15-oz (420 g) drained and rinsed organic black beans, divided in half
1 tsp. (5 ml) minced garlic
1/2 tsp (2,5 ml) ground cumin
1 large organic egg
1 cup (240 ml) shredded Jalapeño Jack cheese OR 1 cup (240 ml) Daiya mozzarella (non-dairy) and some canned green chilies
1/2 cup (120 ml) each: chopped red onion and panko crumbs or cornmeal
sliced avocado for serving
Trader Joe's 12-spice

1. Place 3/4 cups (200 g) of beans and egg white into a food processor. Process for 30 seconds,.
2. In a bowl, add the remaining beans, garlic, and cumin. Partially mash with a fork.
3. Add bean purée to mashed beans in the bowl. Still until combined.
4. Add cheese and onion to the bean mixture. Still.
5. Divide bean mixture into 4 equal portions. Shape each into a patty.
 (a) If made in advance, wrap patties in plastic wrap and keep in the refrigerator.)
6. Place panko crumbs/cornmeal into a shallow dish. Dredge both sides of each patty in the crumbs.
7. Heat pan over medium-high heat.
8. Coat pan with thin layer of olive oil.
9. Add patties. Cook 4 minutes on each side or until browned.

C. Greek Yogurt Sauce:
1/2 cup (120 ml) Greek yogurt OR sour cream
juice from 1/4 a lime
1/4 tsp. (1,25 ml) chili powder
1/4-1/2 (1,25-2,5 ml) salt

1. Mix all ingredients in a bowl.

D. Serve:
Top patty with sliced avocado and dollop of Greek yogurt sauce. 
option: Top with papaya mango salsa.
