A reuben sandwich is a good way to enjoy at a café or try making it yourself. Our local German deli carries pastrami.
Makes 1 sandwich
2 slices of bread of rye bread
1 Tbs. (15 ml) butter at room temperature
2 Tbs. (30 ml) Thousand Island or Russian dressing*
slices of Jarlsberg or Swiss cheese
organic sauerkraut, drained
sliced pastrami
1. Butter one side of two pieces of bread.
2. Spread the dressing on top.
3. Top with some cheese, then sauerkraut, pastrami, and another slice of cheese.
4. Top with the other slice of bread.
5. Grill on both sides in a skillet or in a panini press.
6. Serve sliced in half with a dill prickle.

Thousand Island dressing
1/2 cup (120 ml) vegan mayonnaise
2 Tbs. (30 ml) each organic: sweet pickle relish and ketchup
2 tsp. (10 ml) diced onion
1/4 tsp. (1,2 ml) minced garlic
1 tsp. (5 ml) white vinegar
optional: 2-3 dashes of Tabasco sauce
1. Add all ingredient in a s bowl and mix well.
2. Refrigerate for an hour.
3. Keeps for 3-4 days in the refrigerator.
Russian dressing
1/2 cup (120 ml) vegan mayonnaise
1/3 cup (80 ml) organic ketchup
1 Tbs. (15 ml) each: chopped red onion and red wine vinegar
1. Whisk together all ingredients.
2. Refrigerate until ready to use.
