Dressings are added to organic vegetables. Here are some to add flavor to any vegetable or other dishes.


Apple Dressing
½ cup (120 ml) organic: apple juice or apple cider (not vinegar)
3 Tbs. (45 ml) olive oil
2 Tbs. (30 ml) organic apple cider vinegar
1 tsp. (5 ml) each: Dijon mustard and whole grain mustard

1. In a small saucepan, bring the apple juice/cider to a boil.
2. Reduce heat to medium, simmer 8-10 minutes until reduced by half.
3. Transfer to a small bowl and whisk in the remaining ingredients
4. Suggested organic vegetables: sweet potatoes, beets, kale

Basil Dressing
2 Tbs. (30 ml) each: organic lemon juice, chopped basil, and olive oil
1 minced garlic clove
black pepper to taste

1. Combine all the ingredients.
2. Suggestions: add to pasta; broccoli, tomatoes, eggplant, zucchini, squash, salad greens; fruits; peanut butter

Classic Balsamic Dressing
2 Tbs. (30 ml) each: balsamic vinegar and roasted organic hazelnuts oil or olive oil
1 minced garlic clove
1 tsp. (5 ml) organic maple syrup
black pepper to taste

1. Whisk all the ingredients.
2. Suggestions: radicchio and feta salad; any marinade meat or organic tofu; salad dressing; braised dishes; any vegetable

Harissa Dressing
Harissa is an Indonesian spicy and can be used by itself.
As a dressing:
⅓ cup (80 ml) olive oil
¼ cup (40 ml) organic lemon juice
1 Tbs. (15 ml) red wine vinegar
2 Tbs. (30 ml) harissa paste

1. Whisk all the ingredients.
2. Suggestions: squashes, carrots, beans, parsnips, red peppers;  stews; North African dishes; chicken, shrimp; tomato sauce; hummus; soups


Spicy Yogurt Dressing
1 cup (240 ml) organic plain yogurt (or diary-free goat yogurt)
⅓ cup (80 ml) tahini
3 Tbs. (45 ml) organic lemon juice
1 heaping tablespoon (15 ml) harissa paste

1. Whisk all the ingredients.
2. Suggestions: baked potatoes, vegetables; marinate meat or organic tofu; salads;
