Mushrooms are prized in Italy. It is not a vegetable but from the fungi kingdom. They might decreases the risk of obesity, diabetes, and heat disease. So, serve this at your next party or as a side dish for dinner.
Funghi Antipasto
Serves 6-8

12 ounces (340 g) organic mushrooms
2 Tbs. (30 ml) (dairy-free) butter
6-9 slices of prosciutto, diced
olive oil
Balsamic vinegar
diced parsley

1. Clean the tops of the mushrooms with a paper towel.
2. Thinly slice the mushrooms. Arrange them in a layer on a serving plate.
3. Sauté the diced prosciutto in butter, over medium-hight heat.
4. Sprinkle the prosciutto over the sliced mushrooms.
5. Drizzle with oil and Balsamic vinegar.
6. Sprinkle with parsley and season to taste with black pepper.
