is a traditional originated by the Shopi people of the Sofia region, and hence the
name shopska. There are slight variations from family to family but the basic
ingredients for this refreshing salad are the same.

Makes
6 servings
4 organic tomatoes, chopped
1 large organic cucumber, chopped
4 organic bell peppers, roasted or raw, chopped
1 yellow organic onion, chopped or 6 green organic onions, sliced
2 Tbs. (30 ml) chopped parsley or 2 tsp. (10 ml) dried parsley
½ cup (120 ml) olive oil
¼ cup (60 ml) red-wine vinegar
black pepper to taste
½ cup (100 g) Bulgarian sirene cheese or crumbled feta
1. Place the tomatoes, cucumbers, peppers, onions, and parsley in a large bowl and toss.
2. Place the oil, vinegar, black pepper in screw-top jar, cover and shake until well blended.
3. Toss dressing with the vegetables.
4. Refrigerate until ready to serve.
5. Top with crumbled cheese.
