Need a "fancy" rice dish with a Mexican dinner....
Arroz Mexicano
Serves 4
2 Tbs. (30 ml) olive oil
1 chopped onion
½ organic red bell pepper, chopped
½ cup (100 g) uncooked jasmine rice
¼ tsp. (1,2 ml) chili powder
2 cups (400 g) canned crushed or chopped organic tomatoes
½ cup (120 ml) water
2 bay leaves
pinch or two of black pepper
1. Heat the oil in a saucepan and sauté the onions.
2. Add the bell pepper and sauté 2-3 minutes.
3. Stir in the rice and chili powder. Sauté until the rice turns brown a little.
4. Add the remaining ingredients, cover, simmer 20 minutes.
5. Uncover and simmer another 5 minutes.
6. Remove the bay leaves before serving.
