A sloppy joe is a sandwich consisting of ground beef, onions, tomato sauce, and other seasonings, served on a hamburger bun. It originated in the United States during the 20th century. But I make it with beans instead of meat....
Serves 12
cooks for 6 hours

½ each: chopped organic green bell pepper and onion
3 cloves of chopped garlic
1 can 15.5-ounce (440 g) each: organic red kidney beans, pink beans, and white beans OR any three types of organic beans
1 can 15-ounce (440 ml) tomato sauce OR homemade sauce
½ cup (120 ml) ketchup
2 Tbs. (30 ml) each: cider vinegar, chili powder, and organic brown sugar
1 tsp. (5 ml) cumin
optional: intensify the flavor with 1 tsp. (5 ml) chipotle chili powder or smoked paprika 

1. In a slow cooker, add bell peppers, onions, garlic cloves.
2. Drain the cans of beans, add to the cooker.
3. Pour in the tomato sauce, ketchup, and then the spices.
4. Cover and cook onLOW for 6 hours.
5. Stir in ½ cup (120 ml) scallions and 1 tsp. (5 ml) hot sauce or Worcestershire sauce.
6. On each of the 12 (gluten-free) sliced rolls*, spoon on the bottom roll some bean mixture, sprinkle with 1 Tbs. (15 ml) shredded cheddar or dairy-free cheese and top with a few pickle slices. Close and enjoy. 
*Save the extra bean mixture if serving less than 12 rolls.
