Serves 10
Chill for 30-60 minutes
1 pound (455 g) each organic: yellow summer squash and zucchini
1/4 cup (60 ml) olive oil
1 Tbs. (15 ml) organic lemon juice
2 ounce (60 g) or more crumbled (dairy-free) goat cheese
4 or more organic figs, stemmed and quartered
1. Cut the vegetables lengthwise into thin long strips.
2. Place them in a shallow bowl and sprinkle with 1 tsp. (5 ml) sea salt, cover and chill for 30-60 minutes, to remove the liquid in the vegetables.
3. Rinse with water, pat dry with paper towels.
4. Return to the bowl and toss with oil, lemon juice and pinch of black pepper.
5. Arrange the vegetables on a platter with goat cheese and figs.
