Holidays are a good time to try new appetizers and dips. This should wake up the guest!
Note: It can be made ahead and keep in the refrigerator up to 3 days.
2 Tbs. (30 ml) olive oil
1 chopped onion
½ lb. (225 g) chopped organic mushroom (try different types, or a mixture of mushrooms)
2 minced cloves of garlic
pinch of black pepper
1 ¼ cups (300 ml) organic: sour cream, plain yogurt, or Greek yogurt
⅓ cup (80 ml) mayonnaise
¼ cup (60 ml) chopped chives or parsley (=4 Tbs. dry)-for garnish
1. Heat oil over medium heat.
2. Add onions, stir, until soft, about 10 minutes.
3. Reduce heat, continue to stir until onions are golden brown, about 30 more minutes.
4. Finely chop the mushrooms.
5. Add to the onions: mushrooms, garlic, and parsley/chives.
6. Increase the heat to medium-high, sauté until there is no liquid, about 8-10 minutes.
7. Place in a bowl to cool.
8. Stir in the sour cream/yogurt, mayonnaise and half the chives/parsley.
9. Transfer to serving bowl and sprinkle with the remaining chives/parsley.
10. Serve with vegetables, pita wedges, or chips.
