Ragoût de Pois Chiches d'Afrique du Nord (French)
Serves 4
2 Tbs. (30 ml) olive oil
1 organic finely chopped each: carrot, onion, tomato, and red bell pepper
1/2 tsp. (2,25 g) or more to taste each: ground cumin and cayenne pepper
pinch or two turmeric
2 cans (each 14 1/2 ounces) (each 455 g) organic chickpeas, drained
2 organic zucchini, chopped
5 cups (1,25 L) organic chicken broth
١ 1. Heat 2 Tbs. (30 ml) oil in a large pot over medium heat.
٢ 2. Sauté the onions and carrots about 3 minutes.
٣ 3. Add the tomatoes, bell peppers, cumin, turmeric, and cayenne.
٤ 4. Sauté about a minute.
٥ 5. Add the chickpeas, zucchini, and broth.
٦ 6. Raise the heat to medium-high and bring to a boil.
٧ 7. Reduce the heat to medium-low and simmer, uncovered, until the zucchini is tender, about 15 minutes.
٨ 8. Serve with drizzled of oil on top.
