A dish with a little Mexican, tropical fruit, and French cheese!
Tacos con Frijoles Negros, Papaya
y Queso de Cabra (Spanish)
Serves 4
2 cups (400 g) chopped organic papaya
1/3 cup (65 g) chopped onions (red or white)
3 Tbs. (45 g) chopped cilantro or parsley
1 Tbs. (15 ml) organic lime juice
12 organic corn or (gluten-free) flour tortillas
3 cups (600 g) organic shredded red cabbage
3 cups (600 g) organic black beans (cold or warm)
4 ounces (155 g) or more crumbled (dairy-free) goat cheese
(dairy-free) plain organic yogurt
1. In a bowl, mix the papaya, onions, cilantro/parsley, and lime juice.
2. Toast the tortillas in a skillet over medium-high or in the oven on 350F (175C) until hot, about a minute or two per side.
3. Fill each with some cabbage, beans, papaya mixture, yogurt, and cheese.
