This is a taste dip served with favorite chips, crackers, or flatbed.
Serves 6-8

1 Tbs. (15 ml) olive oil
3 chopped onions
1 can-15 ounces (430 g) organic peas, drained
3/4 cup (150 g) chopped organic walnuts
4 ounces (115 g) organic firm tofu, drained and cubes
2 Tbs. (30 ml) organic tomato paste
ground black pepper to taste

1. Heat 1 Tbs. (15 ml) oil in a skillet over medium-low heat.
2. Add the onions and cook, stir, until very tender and lightly browned, about 25 minutes. Add more oil or water as needed.
3. Let it cool.
4. Transfer to a food processor. Add the peas, walnuts, tofu, and tomato paste.
5. Process until slightly chunky.
6. Season with black pepper to taste.
7. Serve in a bowl or cover tightly and refrigerate for about 4 hours before serving to allow the flavors to blend.
