Fresh lemons, juicy chicken, and roasted potatoes hit the spot for the Greek dish.
Κοτόπουλο και πατάτες λεμονιού
/kotópoulo kai patátes lemonioú/
Serves 4

Adjust the ingredients for 8 chicken tights.
4-8 organic chicken tights
1/2 cup (120 ml) olive oil
juice of three organic lemons
6 crushed garlic cloves
1/2 tsp. (2,25 g) black pepper
2 tsp. (9 g) dried oregano
5 organic potatoes cut into wedges
organic lemon zest for garnish

1. In a bowl, combine olive oil, lemon juice, garlic, pepper, and oregano.
2. Pour over the chicken and marinate for half an hour or overnight.
3. Preheat the oven to 375F (190C)
4 Add chicken and potatoes to a roasting pan and cook for 30 minutes.
5. Turn chicken over and baste with marinade.
6. Bake 35 minutes longer.
7. Transfer to a serving platter and sprinkle with lemon zest.
8. Serve with a Greek salad or some dolmades, olives, and slice of feta*.

Slice of Feta (not dairy-free)
1. Organic cherry tomatoes cut in half on a plate.
2. Thick slice of feta cheese placed on top.
3. Sprinkle a little sliced onions, tomatoes, black pepper, olive oil, and spring of basil over the feta.
Can serve as an appetizer
