This is a vegan version of "hollandaise" sauce. Now, if you can find white asparagus, they are really delicious.
Makes 4-6 servings
1 large bunch of organic asparagus, trimmed
3 Tbs. (45 ml) organic lemon juice
8 ounces (225 g) soft organic tofu, drained
1/4 tsp. (1,25 g) turmeric
optionals spices that go well with asparagus: chives, lemon balm, dill, and/or tarragon,
1. Steam the asparagus for 4-6 minutes or until tender.
2. Put the lemon juice, tofu, and turmeric in a blender and process until smooth.
3. Transfer to a small sauce pan and cook over low heat, stir, until heated through.
4. Arrange the hot asparagus on a serving platter and pour the sauce over the top.
5. Add any optionals spices to taste.
