Add a little zest to tonight's carrot dish.
Preheat the oven to 375F (190C)

1 pound (455 g) organic carrots, (chop the top greens and add to a salad)
2 garlic cloves, minced 
2 tsp. (10 ml) each: sherry vinegar and organic honey

1. Mix the garlic, vinegar, and honey in a bowl.
2. Coat the carrots.
3. Roast for 30-35 minutes. Turn a few times.

Try different colored carrots.
