This recipe is from the Greek island of Samos in the Aegean Sea. 
Κολοκυθάκια ματιστα
/kolokithakia batista/
Makes 4-6 servings

5-6 Tbs. (75-90 ml) olive oil
4 diced organic potatoes
4 crushed garlic cloves
2 diced organic tomatoes
3-4 diced organic zucchini
black pepper to taste
1 cup (200 g) fresh mint or 1/4 cup (50 g) dried
other herbs that go well with zucchini: basil, chives, cilantro, dill, lemon thyme, oregano, parsley, rosemary, sage, tarragon, and thyme

1. In a skillet, heat 2 Tbs. (30 ml) oil.
2. Add the potatoes and stir to coat with the oil.
3. Add 3 diced garlic and 3 Tbs. (45 g) mint (and/or other herb(s), then adjust the amount)
4. Cover and cook over medium-low heat for about 8 minutes.
5. Add half of the tomatoes over the potatoes, more herb(s) and cook another 8 minutes.
6. Layer the zucchini next, again sprinkling with herb(s) and black pepper, rest of the garlic, top with remaining tomatoes.
7. Pour the reaming oil over everything. Cover the skillet and cook over very low heat for 30-40 minutes.
8. Serve war or at room temperature.
