Makes 4
2 very ripe organic avocados
1/4 cup (60 ml) organic honey
1 Tbs. (15 ml) vanilla extract
2 tsp. (10 ml) almond extract
1. Pulse in a food process or blender.
II.
1 cup (240 ml) unsweetened organic almond milk
1. Gradually pour into the blender.
2. Process until completely smooth and creamy.
3. Taste and a bit more honey if needed.
III.
1. Spoon pudding into serving bowls or small glasses.
2. Refrigerate 30 minutes.
3. Top with whipped cream (or leave off for dairy-free guest) and sliced, toasted organic almonds.
