Cheese with fish? I do it with tuna sandwich all the time. -Mike
Preheat the oven to 350F (175C)
1 pound (455 g) wild cod or tilapia
2 Tbs. (30 ml) (dairy-free) mayonnaise
1 Tbs. (15 ml) Dijon mustard
1 tsp. (15 ml) organic lemon juice
1 minced garlic clove
1/4 cup (50 g) (dairy-free) grated cheese, like parmesan (no-dairy)
1. Line a baking sheet with foil and coast lightly with organic cooking spray.
2. Pat fish dry with a paper towel and lay on the baking sheet.
3. Coming remaining ingredients (use half of the cheese) in a small bowl.
4. Spread over the fish.
5. Sprinkle with the raining cheese.
6. Bake for 15-20 minutes or until it is brown and flakes easily with a folk.
7. Serve with braised organic greens, organic potatoes, light pasta and/or salad.
