Quick lunch, travel snack food, side dinner salad....your choice, lots of edamame protein, vitamin rich cucumber, and fresh herbs. A slice of jalapeño would "hit" the spot, optional of course.
Serves 4

A. Dressing:
juice and zest of 1 organic lime
1 tsp. (5 ml) organic maple syrup
1 Tbs. (15 ml) olive oil

1. Wish all the ingredients in a small bowl. Set aside.

B. Salad:
2 cups (400 g) organic strawberries, cut in half and sliced
1/2 to 1 cup (100-200 g) shelled organic edamame, blanched for 3 minutes in boiling water
organic cucumber cut into bite-size pieces
4 cups (800 g) organic spinach
handful of fresh mixed organic lettuce leaves
handful of basil leaves, torn or dried to taste
optional: 1 small (or if you like hotter) jalapeño, seeded and minced

1. Combine all the ingredients in a large bowl.
2. Pour the dressing over, toss gently.


1 cup (200 g) edamame (boiled green soybeans) =

carbohydrates   6.14g           2.o5%
fat                       4.18g            6.43%

1/2 cup (100g) adds a lot of daily fiber, protein, and vitamin/mineral to your diet.
