Enjoy it for school or work lunch or after school snack.

Makes 1 roll-up
8-inch (20 cm) pita bread
1/2 cup (120 ml) yogurt cheese https://veggiefernandezs.blogspot.com/2019/02/yogurt-cheese.html
1/4 cup (50 g) olives
1 organic sliced tomato
1 sliced organic cucumber
6 mint leaves or 2 pinches of dry mint
2 Tbs. (30 ml) olive oil or less to taste

1. Open one pita bread and slather the yogurt cheese on it.
2. Scatter the olives, tomato, cucumber, and mint on top.
3. Drizzle with olive oil.
4. Roll up and enjoy lunch or a snack.
 (a) Add more cheese if the pita is larger or to taste.
