Make a smashed potato salad for your next party.

1. Boiled some organic new potatoes.
2. Drain and crush gently with a mixture of (dairy-free) butter, olive oil, juice of one organic lemon, and Tbs. (30 g) dijon mustard.
3. Fold in bunch of roughly chopped or dried herbs*.
4. Serve at room temperature.

*Herbs that go well with potato salad. Use what you like and as much as you like.

  • parsley
  • garlic
  • black pepper
  • chives
  • thyme
  • tarragon
  • dill
  • mint
  • basil
