You are ready for Mexican food, but there is no salsa! Stop and make this quick sauce.
Makes a cup (240 ml)

2 Tbs. (30 g) chopped organic red onion and cilantro leaves
2 tsp. (10 ml). organic lime juice
1/2 jalapeño or chipotle chile, steamed and seeded
1 organic clove of garlic, minced or pressed
pinch of black pepper 
2 organic tomatoes cut into eights or 14.5 ounce (400 g) can diced tomatoes, drained

1. Pulse all the ingredients except the tomatoes in a food processor, about 5 pulses.
2. Add the tomatoes and pulse about 2 times.
