We usually buy breaded tilapia, bake it, served with French fried potatoes. Now, this is even better, without breaded. Still have the potatoes if you like.
Serves 2
Preheat the oven to 375F (190C)

1 pound (455 g) or two frozen tilapias (thawed)
juice and zest of one organic lemon
1 Tbs. olive oil
1 minced organic garlic clove
1 tsp. (5 g) capers

1. Spray a baking dish with olive oil or use parchment paper.
2. Place the piece on the baking dish.
3. Whisk together the lemon juice, olive oil, garlic, and capers.
4. Pour over the fish.
5. Bake for 15-20 minutes, until the fish flakes easily with a fork.
6. Serve immediately, spooning the liquid from the pan over the fish and topping with lemon zest.
