Pain de viande tropical (French)
Serves 6
Preheat the oven to 400F (200C)
1 1/2 pounds (680 g) ground organic chicken or turkey
3 organic eggs
1 organic yellow bell pepper, cut into small dice
3/4 cup (130 g) peeled organic mango chunks or frozen, thawed
1/3 cup (25 g) unsweetened shredded coconut
1/4 cup (15 g) each: chopped parsley and red pepper flakes
1. Mix together the chicken, eggs, bell pepper, mango, coconut, parsley, and red pepper flakes.
2. Transfer to a bread pan.
3. Bake 50-60 minutes or until the meat is cooked through.
