It is a specialty in Frankfurt. Grüne Soße is know as salsa verda (in Italy), sauce verte (in France), and chimichurri (in Argentina). It is even more popular in Frankfurt during summer, served with hard boiled eggs and side dish of boiled potatoes. Try the sauce over other foods.

Serves 4
2 Tbs. (30 g) organic (dairy-free) butter
2 Tbs. (30 g) each: (gluten-free) flour; chopped parsley, chives, dill, and watercress
2 cups (5 dl) bouillon
juice of one organic lemon
1/2 tsp. (1,5 g) German mustard, if possible
2 Tbs. (30 ml) organic (dairy-free) yogurt
8 organic eggs
1. Heat butter in a saucepan.
2. Add the flour and mix.
3. Add the bouillon slowly, stirring into the flour and butter mixture.
4. Bring to a boil, continure to stir.
5. Remove from the heat.
6. Add the lemon juice, yogurt, and the herbs, except watercress.
7. Hard boil eggs rinsed with cold water, peel and cut in half lengthwise.
8. Pour the hot or cold sauce over the eggs
9. Garnish with watercress.
10. optional: Serve with salad and French bread.
