Capellini "little hairs" is a very thin, rod-shaped, long strands of pasta.
Capellini alle olive (Italian)
Serves 3-4
1 tsp. (5 ml) olive oil
2-3 organic cloves of garlic, minced
2-3 Tbs. (30-45 g) capers, drained and lightly rinsed
1/2 cup (65 g) organic walnut pieces, pan toasted, coarsely chopped
1 (8-ounce/225 g) package whole wheat capellini or a gluten-free pasta
10-12 black organic pitted olives, minced
organic cheery tomatoes, cut in half
grated (dairy-free) cheese
handful of parsley, coarsely minced
uno 1. Heat the oil and sauté the garlic.
due 2. Add the capers and sauté for 3-4 minutes.
tre 3. Add the walnut pieces, small amount of water, then cover.
quattro 4. Simmer 5-6 minutes over medium-low heat.
cinque 5. Purée the sauce in a food processor until the walnuts are about half broken. Itshoud be coarse but bot smooth.
sei 6. Add pasta to boiling water with a little salt (so the pasta does not stick).
settle 7. Cook al dente (according to directions).
otto 8. Drain well but not rinse.
nove 9. Toss with the hot sauce, olives, cheese, and minced parsley.
