Buy organic sweet potatoes with dark orange flesh because they have more beta-carotene (vitamin A, important for growth, development, immune system, and good vision). Then, too, when you make your own, you control the salt.
Preheat the oven to 225F (107C)

2 medium organic sweet potatoes, very thinly sliced
1 Tbs. (15 ml) olive oil
optional: pinch of sea salt and/or black pepper

1. Line a large rimmed baking sheet with parchment paper.
2. In a bowl, combine the ingredients. Toss to coat.
3. Bake for 75 minutes or until they are golden on the edges and crispy.

Ready to sever with a meal or with one of the appetizer dips.
