Just three ingredients make a tasty dinner.
Serves 4
Preheat the oven to 375F (190C)

4 Tbs. (60 g) (dairy-free) butter
1 Tbs. (15 ml) olive oil
sliced organic (mixed) mushrooms
1 sliced organic onion
chopped garlic cloves
4 organic potatoes, thinly sliced
parsley
1/2 cup (120 ml) (dairy-free) yogurt
1/2 cup (66 g) (dairy-free) cheese

1. Melt half the butter in a skillet with the oil over high heat.
2. Sauté the mushrooms for about 5 minutes. Remove just the mushrooms.
3. Sauté the garlic, 3 minutes. 
4. Place half of the potatoes slices on a baking dish. 
5. Add parsley, mushrooms and onions.
6. Add the remaining potatoes.
7. Add the rest of the butter.
8. Bake for 15 minutes.
9. Pour the yogurt over the mixture, top with the cheese, and bake 10 more minutes.
