Wraps are called burritos in Mexico. Wraps are found in Mediterranean and in South Asia where the Kolkata, India there is a street-food called kati roll. People have been eating wraps before the 1900s. It was not until the 1980s and '90s, that Mexican and Tex-Mex burrito became popular in California.
Burrito de aguacate y espárragos (Spanish)
Serves 6
(Rice needs to be chilled.)
organic asparagus, steamed
ripe organic avocado(s)
juice of 1 organic lime
minced organic garlic cloves
2 cups (260 g) chilled cooked rice
3 Tbs. (45 ml) organic (dairy-free) yogurt
(gluten-free) tortillas
cilantro or parsley
diced red onion
optional:
- chopped organic red bell pepper
- coriander powder
- crushed red pepper
uno 1. Mash the avocado, lime juice, and garlic.
dos 2. In another bowl, mix the rice and yogurt.
tres 3. Spread each tortilla with avocado mixture, top with the rice, cilantro/parsley, onions, (and optional bell pepper)
cuatro 4. Add the asparagus and any seasonings.
cinco 5. Fold up broth sides and roll tightly.
seis 6. Cut in half before serving.
