Romanian cuisine is a blend of different dishes from many traditions with Romanian character. Our son was performing at the Euro-Muiscal Festival one summer. So of course, Judy and Mike had to go!
Ardei Umpluti (Romanian)
Serves 3
Preheat the oven to 375F (190C)
A. Source / Sos:
1 cup (240 ml) each: organic tomato purée and water
1/2 cup (120 ml) organic soured cream or (dairy-free) yogurt
1 Tbs. (15 g) paprika and chili powder
unu 1. Whisk together.
B. Peppers / Ardei:
1/4 cup + 2 tsp. (50 g) basmati rice
3 organic yellow or red bell peppers, or mix them
1/2 pound (250 g) organic pork
2 chopped organic shallots
1 tsp. (5 g) each: caraway seeds, dill seed, organic lemon zest
1 Tbs. (15 g) each: paprika and chili powder
1 Tbs (15 ml) organic lemon juice
1 organic egg
handful of chopped dill and parsley for garnish
două 2. Soak the rice in water.
trei 3. Cut the tops off the peppers and save them. Remove the seeds.
patru 4. Drain the rice and add to the bowl with the remaining ingredients. Mix well.
cinci 5. Stuff each pepper and put the top on.
şase /sha-se/ 6. Place them upright in an ovenproof dish.
şapte 7. Pour the source around them to about halfway up the peppers.
opt 8. Cover with foil and bake for 1 1/2 hours.
nouă 9. Remove the foil and continue baking another 40 minutes or so, until the tops are slightly golden and peppers are soft by using a folk.
zece 10. Serve with the sauce poured around the pepper.
